Underneath the cuisine of the Acadians lies a tumultuous history.
Acadians, now popularly referred to as “Cajuns” (‘Cajun’ is technically a slang word, derived from ‘Acadian’) descended from French colonists who settled in what is now Eastern Canada. During the 17th century, Acadian culture flourished; they began speaking a newly evolved dialect of their native French language, forming communities, cultivating land, and developing original fare. The mid-1700s proved less prosperous for the colonies. Skittish about the French-Indian War, the British government, which had gained control of the region, deported thousands of Acadians from the area. Most were sent to the American colonies, while others were deported to the Caribbean, England, or France. The community of displaced Acadians migrated to present day Louisiana, developing what we recognize as the vibrant Cajun culture in the region. Acadian food, then and now, presents a blend of French and soul food widely beloved not only in Louisiana, but around the world—including Omaha. Avoli Osteria was opened by Dario & Amy Schicke in July 2013.

Avoli is a Northern Italian restaurant, located in the historic Omaha neighborhood of Dundee. We hope a dining experience at Avoli will remind you of a trip to Italy or help you imagine what eating in Italy would be like. When we began dreaming and planning a new restaurant, we wanted to recreate an authentic Italian experience. We wanted to give diners an opportunity to possibly try something they may not have had before. We felt Omaha needed an Italian restaurant with a modern twist. Avoli’s wine list contains only wines you find in the Northern regions of Italy, the food consists of many local ingredients and what we can’t find locally, we import from Italy.

Dario and I have lived in different places, Dario is from Sarajevo, Bosnia and I grew up in Kearney, Nebraska. We met in Munich, Germany where we were married. We moved to New York city where we lived for many years until September 11, 2001. We have been in Omaha ever since. We opened our first restaurant, Dario’s Brasserie, in 2006. Dario is a French classically trained chef, he attended the French Culinary Institute in New York.

We are proud to call Omaha our home and so happy we chose to start our lives over in this community. The city of Omaha is amazing, it’s been extremely supportive and welcoming, we look forward to being here for years to come. We hope you love Avoli as much as we do.

The name Avoli comes from combining our daughters names, Ava & Olivia.

We met in Metropolitan Community College’s Culinary program, which was a great place to earn our credentials and broaden our network of friends, chefs, and fellow foodies. But we both agree our ongoing education has been and will always be through travel. We travel whenever we have the chance, and sometimes we’ll plan a trip around reservations at a specific restaurant. We’ve had some amazing meals and some great adventures, and it all shows up in the food we serve.

WE SERVE FOOD BASED ON OUR BEST MEMORIES.
Our families were our original culinary inspiration, and everything we serve honors them and their memories. Canadian family who hosted family gatherings filled with laughter, joy, food and spirits. An Italian-Canadian Great-Aunt who served up food that evoked warm emotions as well as satisfied appetites. A Belgian-American grandma from South Omaha who dished out delicious kneeples, head cheese, and plum dumplings. We owe our success in large part to their support. When we’re in the kitchen, we’re always cooking for them.

We buy local, humanely raised, and preservative-free ingredients. Our family farm is one of our main sources for produce–it’s been in the Urban family for 100 years, so we know it’s high-quality and grown with love.

WE NEVER TAKE OURSELVES TOO SERIOUSLY.
The best part about owning a restaurant is that we have a creative outlet for our ideas. In the past four years, we’ve offered more than 1,400 specials with only a few repeats.
SOMETIMES IDEAS COME ABOUT WHILE WE’RE SIPPING ON COFFEE WATCHING OUR DOGS PLAY, other times an idea comes from a memorable meal.

Dario’s Brasserie is the culmination of a long time dream of chef/owner Dario Schicke who grew up in Sarajevo and left his home in 1992 at the start of the Bosnian War. He ended up in Germany where he met his wife, Amy, who hails from Kearney Nebraska. They moved to New York City where Dario opened a business that specialized in Exotic and Belgian Beers.

Finding a passion for Belgian Beers, Dario wanted to learn to cook with them. So he enrolled at The French Culinary Institute in New York, training in classical French cooking.

In 2001 after the devastation of the World Trade Centers on 9/11, Dario and his family decided to move to Nebraska and start over in Omaha. Dario worked at the French Café and The Market Basket before opening his own restaurant.

Dario’s Brasserie opened December 31, 2006 in the heart of Omaha’s historic Dundee neighborhood. A Brasserie, pronounced (Brahs-uh-REE) is an informal French café that serves beer, wine and simple hearty food. Dario’s is a European style restaurant with banquette seating and gentle lighting that give an intimate and elegant feel. Owner, Cedric Fichepain was born in France, lived in Italy and moved to the US in 1997 after marrying Fremont native Desarae Mueller in 1995. He started his career as Executive Chef of Farucci’s and after just six months the restaurant was selected as one of the 10 best restaurants in 2000. Cedric opened his own place in April 2001 and once again immediately placed on the Omaha World Herald top 10 list.

After more than fifteen years in Omaha, “the little corner of France in West Omaha” has become one of the finest dining establishments in town. The restaurant features French classic cuisine in a romantic south of France atmosphere. The menu covers all the regions of France and offers the most extensive French Wine list in Nebraska.

Le Voltaire received the Wine Spectator Award for its outstanding varieties of French Wine for the past fifteen years. A beautiful private room with a direct view of the wine cellar was opened in October 2004 and can seat up to 40 people. It can be used for private parties, business meetings, and rehearsal dinners.

Le Voltaire and Cedric Fichepain have been featured in local and national publications. The restaurant is a proud member of the Omaha Restaurant Association and has participated in numerous fundraising events in Omaha: Opera Omaha, Chef’s Night Out, Taste of the Nation, VNA Art & Soup, Share Our Strength, Dining out for Life, March of Dimes, etc…Cedric is a Certified Executive Chef from the American Culinary Federation and is an chef instructor at the Culinary Arts Institute. He is an active volunteer at the VNA for Cooking Matters. He was also one of the Midland Business Journal’s award winners in 2004 “40 under 40”. Cedric has been inducted in the Omaha Restaurant Hall of Fame in 2015. He is also the French Honorary Consul for the State of Nebraska, South Dakota and North Dakota. He and his co-writer, Barbee Davis, published and produced the play “20 Percent and Counting”, a work that chronicles the tribulations of the daily life of a waiter. Cedric also published his first murder mystery book “Fowl to the Bone” in September of 2015.

Omaha Magazine awards this quaint Rockbrook Village Shopping Center café and bar its “Best Italian Restaurant of the Year,” “Where the Locals Eat” and “Best Food of the Year” awards. The owner and head chef of Pasta Amore, Lillo “Leo” Fascianella, was born in San Cataldo, Sicily in 1956. Leo’s parents moved the family to America in 1972 in search of a better life. They settled in Omaha, Nebraska to join relatives who had previously immigrated to a part of town known as “Little Italy.”

Leo started out shining shoes and eventually got a job washing dishes at what was then a popular fine-dining establishment called “The Golden Apple.”  The owner and chef took Leo under his wing and nurtured his passion for cooking along with his desire for a successful life. Over time Leo met established chefs from all over the world and worked in restaurants in New York and Chicago. Eventually he returned to Omaha and opened Pasta Amore in 1986.

One year after opening Pasta Amore, Leo met and later married Patricia. That was almost 30 years ago and together they have much to be proud of.  They have a thriving business and three grown children who have all contributed to the continued success of the family business.

Leo considers himself an artist and refers to his creations as “edible paintings.” His love of cooking is equally matched by his loyal customers. Many patrons have become close friends and continue to dine at Pasta Amore on a regular basis. The restaurant is more popular than ever. Lines still form on a Friday nights, especially during the summer months, and several customers agree that the large outdoor patio is by far the best in town.

The Fascianellas also own a small farm. They grow a variety of crops and raise chickens, making Pasta Amore one of the original “farm-to-table” establishments in the metro area. They use only the finest, freshest ingredients in their award-winning recipes and their famous, mouth-watering pastas are made the “old-school,” or rather, the “old-country” way — on pasta machines imported from Sicily.

Leo Fascianella was recently awarded the “Golden Toque” which is one of the highest awards any Chef can get in the country. Only a select few across the United States receive this very prestiges award.

Anyone who meets Leo cannot help but be struck by his delightful sense of humor, his high level of energy, and his passion for work and family. He has no shortage of ideas about all the new things he would like to try and he has no plans of slowing down anytime soon. He often says that he will probably be running the restaurant until he’s at least 90 or 100!

While working, he attended culinary school at Southeast Community College, graduating as a certified chef with the American Culinary Federation. He continued his education at the University of Nebraska, where he received his bachelor’s degree in Culinology (food science). With degree in hand, he traveled to Chicago and became a chef with Lettuce Entertain You in the upscale Wildfire division, honing his skills in American, French and Asian techniques. Three years later, he joined Cooper’s Hawk Winery and Restaurant as R&D chef, developing wine dinners and menu concepts and working with the Celiac Foundation to help create more effective dining options for allergen sensitive diners.

After spending nearly six years in Chicago, Jared and his family moved back to Nebraska, where he took a position as an executive chef for Blue Sushi Sake Grill in Omaha before developing and opening Railcar Modern American Kitchen.

Chef Matthew Moser was born and raised in Omaha, NE and developed a passion for food and cooking at a young age. After graduating in 2005 from Western Culinary Institute in Portland, OR, Chef Moser moved back to Omaha where he worked at the nationally recognized French Café. It was there that Chef Moser refined his traditional French techniques and was quickly promoted to Sous Chef. To further advance his culinary knowledge, Chef Moser accepted a position at V Mertz, a contemporary fine dining restaurant in Omaha where he acquired a passion for farm-to-table ingredients that still strongly influence his menus today. 

In 2009, Chef Moser joined Omaha based Flagship restaurant group as Executive Chef at Blue Sushi Sake Grill. He successfully opened two new additions to the restaurant group in Fort Worth, TX and Denver, CO. In 2012, Moser became Executive Chef at Flagship’s Plank Seafood Provisions where he played a large roll in the creation and design of the menu. After spending two and a half years working at Plank, Chef Moser decided to leave Flagship and open up a concept of his own in Omaha’s Old Market called The Market House. 

The Market House opened in June of 2015 and was quickly recognized as one of Omaha’s best new restaurants. The menu reflected the innovative culinary skills of Chefs Matthew Moser and Ben Maides. In January 2015, an unfortunate gas explosion caused the restaurant to catch fire which ultimately destroyed the space. Chef Moser spent the next year working on his newest concept, Stirnella. 

Stirnella opened it’s doors in February of 2017. The restaurant’s menu and atmosphere reflect Chef Moser’s passion for his Nebraska roots and desire to create new and interesting culinary experiences for his guests. His seasonal menus are familiar but with unique ingredients and preparations that make them stand out among their more traditional counterparts.

Matt Carper was born and raised in Glenwood, IA; a small but robust farming community in Southwest Iowa. At a young age, Matt was unsure what he wanted to do, attending classes at University of Nebraska at Omaha seemed like the right thing. But Matt needed something more so he joined the Iowa Army National Guard, in part to pay for his education, but also for the adventure. Upon returning from a deployment to Afghanistan in 2005, Matt worked for several well know steakhouses (801 Steak and Chop at Paxton and Omaha Prime) in Omaha, NE. It was there while going to college that Matt realized he had a passion for the restaurant industry. Matt’s wife to be, Carrie introduced him to some amazing people. One of which worked at Blue Sushi Sake Grill in Northwest Omaha, Omaha’s premiere sushi restaurant. The evolution of sushi was making a big splash in Omaha and Matt recognized that. With the help of Matt’s wife’s best friend, Sara Cemer, he decided to adventure off and jump on the wave. In 2007 while finishing his Master’s degree, Matt began what would be a large portion of his restaurant career. Matt managed several restaurants for Flagship Restaurant Group from Blue Sushi Sake Grill, Bianco Restaurante Italiano, Baby Blue Sushi Sake Grill, Plank Seafood Provisions and Flagship Commons, Omaha’s first food hall. Matt Carper met Matt Moser at Blue Sushi Sake Grill and recognized his passion for high quality food and dedication to being a creative chef. Their working relationship continued for several years before joining forces to create one of Omaha’s best seafood restaurants, Plank Seafood Provisions. Moser and Carper helped design the menus and develop Plank with Flagship Restaurant Group. While at Plank, they always talked about other concepts they thought would do well in Omaha. Moser took the leap and opened The Market House in Omaha’s Historic Old Market. With the gas line explosion in the Old Market, The Market House was on standby for Matt Moser. Early in the summer of 2016 Moser asked Carper to review this new concept idea. Carper was immediately drawn in and the vision was painted. Carper asked Moser where Blackstone was and if he could see the space, he had honestly never been to Blackstone. Late in 2016 Carper was asked to be a part of what is now of course his favorite project to date. But don’t worry, there will be more…

The history of Tanner’s starts in the 1980s in town of Atchison, Kan., a little college town in the Northeast corner of the Sunflower State. Grandpa Tanner had spent years quenching the thirsts of his friends and neighbors in the town where he grew up. However, he had his eye on the big city and decided to settle in Johnson County, Kan.

He envisioned a bar and grill where the service was always friendly, the food was tasty, the beer ice cold, and you could find Grandpa himself behind the bar serving and entertaining the guests day and night.

The first Tanner’s Bar & Grill opened on 87th Street in Lenexa, Kan., in 1985, with Grandpa Tanner and his friends building it from the ground up. From the very beginning, Tanner’s Bar and Grill in Lenexa was a place where Johnson County residents from near and far traveled for happy hour, to watch the local boys earn another victory on TV and to relax in a friendly atmosphere.
Word traveled fast about what a great place Tanner’s was to visit. Grandpa Tanner was serving up tasty food, and Tanner’s Bar and Grill was THE place to hang out and watch the big games on the big screens. It wasn’t long before people in other parts of the city wanted Grandpa Tanner’s famous Chicken Lips©, Boogas©, and steak specials closer to their homes, too.

So Grandpa Tanner and friends opened a new location on 119th Street (right off 69 highway) a few years later. Not to leave out his friendly Missouri neighbors who had come across State Line so many times to visit the Kansas locations, Grandpa Tanner set out to provide even more refreshment to the Show-Me side of the big city. He added another Tanner’s Bar & Grill in historic Waldo at 74th Terrace and Broadway.tanners

Now Grandpa Tanner was a busy man, but he made sure he visited all the locations as much as possible to make sure the Chicken Lips©, the Boogas©, and the beer met his satisfaction. Grandpa Tanner was pleased when he saw all the people coming to all the locations to hang out with their neighbors and friends. Never one for idle hands, Grandpa Tanner kept on building Tanner’s Bar and Grills, trying to keep up with the demands of the people.

He added locations on 143rd Street, Platte City, MO., Gladstone, Mo., and Shawnee, Kan. Grandpa Tanner’s dream of being “The Friendly Purveyors of Good Times, Fine Food and The Pause That Refreshes” had become a reality. Grandpa Tanner had come to the big city and done well.

Other towns are seeing how the good the great people of Kansas City have it, and are demanding a Tanner’s of their own. Tanner’s Bar and Grill now has two locations in Omaha, Neb., and one in Middleton, Wis.

Grandpa Tanner doesn’t make it around to all the locations as often as he would like. Driving around the big city all the time is a big task. But he still likes to stop in one of the Tanner’s location every single day of the week, just to make sure everything is up to his high standards.

Chef Jared Clark

As owner of Omaha-favorite Railcar Modern American Kitchen, Jared Clarke is proud to be opening a new neighborhood restaurant in Countryside Village. A native of Fairfield, Nebraska, Jared received his culinary training from Southeast Community College and the University of Nebraska where he received a degree in Culinology. After beginning his career in Lincoln, Jared moved to Chicago in 2005 to work for Lettuce Entertain You Restaurants and Cooper’s Hawk Winery and Restaurant where he honed his skills in American, French and Asian cooking techniques. During his time developing wine dinners and menu concepts as R&D chef at Cooper’s, Jared worked with the Celiac Foundation to help create more flavorful gluten-free offerings.

Six years ago, Jared and his family moved back to Omaha where he was executive chef at Blue Sushi Sake Grill before developing and opening Railcar Modern American Kitchen in December, 2012.

Railcar has developed a loyal following of diners who crave Jared’s modern comfort food made from scratch. Now, he is excited to provide the same high-quality experience at Timber Wood Fire Bistro, a wood-fired grill concept.

In 1957, Val and Zena Weiler operated the Campus Fruit Market in Lincoln, Nebraska. It was clear to them that their business would soon be eclipsed by the large supermarkets springing up across Lincoln. The landmark which had stood for a dozen years, had to go. In its place, armed with three dozen pizza pans, a recipe that had been in Mrs. Weiler’s family for years, and a generous amount of trepidation, they decided to open a pizza business.

They took in $60 their first day, and as the restaurant’s reputation grew, patrons began to gather and watch through the window as the pizzas were made. They would stand in line for an hour or more to sample the pizza and pasta specialties created in the original restaurant.

There was just one location then and no trip to the city was complete with out stopping to eat at Valentino’s!

Valentino’s HistoryAbout three years after the 1971 purchase of Valentino’s, members of the Messineo and Alesio families carefully formulated plans to expand into additional locations.

Through controlled expansion, and an elaborate system of quality controls, Valentino’s steadily grew. In 1990, Valentino’s opened its first Valentino’s To-Go location, offering take out service only. These stores were an immediate success. Today there are more than 18 successful To-Go locations operating.

Today, Valentino’s has expanded to 35 restaurant locations in 4 different states. The wait is seldom longer than fifteen minutes now, but the recipes and meticulous preparation steps remain.

The Secret to Success
Valentino’s success began with those wonderful family recipes that were passed on when the business changed hands in 1971. However, there’s more than recipes to this story. The highest quality food, reasonable prices, immaculately clean and comfortable restaurants, genuinely friendly service, and a written corporate creed which says that “community service is as important as the quality of the food”, have helped keep Val’s tremendously popular.

Roy Gilad and Tara Gilad, a pair of successful business owners, founded Vitality Bowls in 2011 in San Ramon, California. The duo started the superfood café concept together as a result of discovering their daughter’s severe food allergies and wanting to find healthy, safe food alternatives. Since franchising began in 2014, the brand has seen significant growth with more than 100 cafés open and in development. Today, Vitality Bowls is redefining the fast casual healthy food restaurant sector every day at each of its locations across the country.
